Chef Randal headed the team of Cypress Gardens Adventure Park at the annual Bacchus Bash in Orlando on the 11th of April. The yearly event, held by the CFHLA (Central Florida Hotel and Lodging Association) raises funds for hospitality student scholarships.
The outdoor Orlando Premium Outlet mall at the end of International Drive was packed with vendors from top area restaurants and resorts. There were belly dancers, stilt walkers, and decorating the Cypress Gardens booth like southern magnolias, the Cypress Gardens Belles, with their hooped dresses and fluffy parasols.
CFHLA raised more money than anticpated and the Chef and his team walked away with Best Menu Item (Carpetbaggers), Best Decorated Booth and Most Entertaining/Interactive Booth. Photos and further information on the Bacchus Bash can be obtained from CFHLA.org .

Chef Randal said his farewells to the Ocala Hilton this November, serving up his final feast for the Dinner in the Dirt Equestrian event. He can now be found at the Cypress Gardens Adventure Park in Winter Haven, Florida, as the Food and Beverage Director. The Park was recently purchased by Land South Ventures. The Chef can still be seen in the Marion County (Citrus and Alachua as well) Dishin’ It Out on the television.

Chef Randal has recently become a Certified Executive Chef through the Central Florida Chapter of ACF, the American Culinary Federation.

Chef Randal participated for the American Cancer Society charity event, Taste of Lake County, on Friday, March 16th. Together with fellow epicurean Charlie Dilibero,the Director of Banquets, also from the Ocala Hilton, they dished out a storm. The menu, fit for Southeast Asian royalty, included: Pan Seared Tuna with Red Himalayan Sticky Rice with Garlic Chili Sauce, Avocado and Cucumber Relish, Roulade of Duck filled with Duck farce meat wrapped in brown Mongolian Bread with a Plum Drizzle,Scallops steamed in natural shell with Red Pepper and Spinach Mousse and topped with Asian slaw. For dessert? Sample sized Passionfruit Mousse topped with a Chocolate Cap and mini Tiramisu mousse cakes. Their endeavors were later spotted on WESH channel 2 news that evening. In the past, Chef Randal has also participated in the Taste of Citrus County and Taste of Ocala events.
