Cranberry Apple Relish
½ cup Cranberry juice
1 cup sun-dried Craisins
2 teaspoons butter
¼ cup red onion fine diced
2 cups red delicious apple small diced (same size as cranberry)
¼ cup mint jelly
Pour cranberry juice over Craisins and sit off to side to bloom.
Place butter in hot saute pan and saute onion until clear, add the apple, mint jelly and soaked Craisins. Bring to a boil then remove from the heat and serve as condiment with lamb chops.
Do not over cook the apples and make sure the mint jelly is dissolved.
