Every party needs its’ snacks, and beer does go well with something salty, but sometimes ripping open a bag of chips gets so boring, so why not make your own crunchy chips with dip to satisfy the munchy crowd?
PITA CHIPS
4 pieces pita bread
1 clove garlic, minced
2 tablespoons olive oil
Cut each pita bread in quarters and lay on a baking sheet. Mix minced garlic and olive oil in small bowl. Using a pastry brush, coat each pita with olive oil & garlic mixture. Bake at 350F until bread begins to brown.
BLACK EYED PEA HUMMUS
The Greeks have their black olive Hummus, but us southern folk look to our fields for flavor.
2 cups canned black eyed peas (fresh cooked black eyed peas work well too)
2/3 cup tahini paste
5 tablespoons olive oil, divided
1/4 cup lemon juice
3 cloves garlic
Salt & pepper to taste
1 teaspoon paprika
1 tablespoon fresh parsley, chopped (optional)
In a food prosessor, puree the black eyed peas, tahini paste, 3 tablespoons olive oil, lemon juice & garlic until smooth. Season with salt and pepper to taste. Transfer to clean serving bowl and garnish with chopped parsley. Serve with garlic pita bread chips.
