Spinach and Fennel Salad
1 lb. bag spinach
1 cup shaved fennel stalk
3 oranges sectioned
5 slices bacon cut square
1 cup sliced mushrooms
¼ cup sugar
½ cup white vinegar mixed with1 teaspoon cornstarch
½ teaspoon ground ginger
½ teaspoon fresh minced garlic
In a bowl, place the spinach, fennel and orange segments. In a sauté pan add bacon and cook until crisp; then remove cooked bacon to paper towel to drain and crisp up. To make the dressing: In the same pan as bacon remove half the grease and add the mushrooms, garlic and ginger and cook for about a minute or until the mushrooms are done then add sugar and vinegar and cornstarch mix as soon as it comes to a boil, remove from the heat and add the bacon to bowl along with the dressing and mix well serve immediately.
Easy Southern Chicken and Dumplings
2 cups all-purpose flour
2 teaspoons baking powder
3/4 teaspoon salt
2 tbsp butter, melted
3/4 cup buttermilk
Mix top 5 ingredients well and sit off to the side covered.
1 tablespoon butter
1 ½ cups mirepoix (carrot, celery, onion) large diced (optional)
2 tablespoons minced fresh herb leaves such as parsley, chives, tarragon and garlic
1 store bought rotisserie chicken pulled off the bone (makes life easy)
1 quart chicken stock
Add the butter to a pot and sauté the mirepoix and herbs for about a minute then add chicken and the chicken stock and bring to a boil. On the dumplings using the smallest scoop you can find, scoop them out and roll in flour. Then run them through the widest setting on a pasta machine then layer them out in the pot with the chicken and stock (as you roll them, push them down in the pot to layer them in). After they are all in the pot, place lid on pot and let the dumplings cook for about 10 to 12 minutes and they are ready to serve.
Peanut Butter Pie
1 (8 ounce) package cream cheese, softened
1 cup creamy peanut butter
½ cup honey
¼ cup heavy cream or milk
1/2 cup confectioners’ sugar
1 (9 inch) prepared Oreo cookie crust
1 cup whipped topping
4 chocolate covered peanut butter cups frozen
Mix together in a mixer or by hand the cream cheese, peanut butter, honey, cream and sugar then let it set for about 5 minutes for the sugar to dissolve thoroughly. Mix again a little, then spread into the prepared pie shell, top with the whip topping and crushed peanut butter cups place into the refrigerator to cool down and set up then cut and serve
