Randal has been exploring the environs around Florida, looking for the perfect dishes to embody the distinct souls of towns throughout Florida for Season Two of The Chef’s Table. This month found him in Apalachicola, the sleepy Gulf Coast town and oyster capital of Florida.
Fresh oysters are collected the bay early in the mornings and then consumed by the lucky fresh that evening. All you need are crackers, lemon juice, some cocktail sauce and horseradish.
Oh yeah, and hot pepper sauce, don’t forget that hot pepper sauce.
There are Raw Bars everywhere, but you can get your oysters steamed too. Raw is best though.
