Hearing about the latest hummus food recall made me shudder. Why do people put their faith in manufactured food products that can so easily be made in their own kitchen? During my last Healthy Kids Recipe Contest tour, I made the rounds at the local schools, demonstrating to elementary school children how easy it is to make.. you guessed it, hummus!
This tasty dipping snack goes great with crackers, celery, carrots- as spread on sandwiches and chips and more. Try it out for a healthy after school snack!
Hummus
So easy to make, the store bought version can never compare to homemade hummus. Excellent for a fresh veggie dip- think celery, carrots, raw broccoli, you can also serve it with hunks of fresh bread or toasted pita chips and great with Sun Chips for a healthy after school or work snack.
2 cups garbanzo beans (canned works fine)
2 lemons juiced
1 tablespoon garlic
1 tablespoon tahini
Pinch of seasoning or rub
½ cup olive oil
Puree smooth in food processor. Serve with crackers or cut vegetables for dipping.
For a further twist, you can add some sundried tomatoes, about 1/3 cup and 4 or five green pimento filled olives and blend for a further half minute before serving.
