Hi all. We had a great week of food demonstrations at both Top of the World and Downtown Ocala Farmers Markets with Measure Up Marion. I have received many inquiries about the recipes, as we ran out of recipe cards at one of the events, so here are the recipes for you to try at home:
October Farmers Market Demo- October
Sunflower Sprout, Conch Pea and Kale Salad
2 cups sunflower sprouts
2 cups chopped kale
1 cup conch peas blanched (other fresh peas will work,
also zipper, soy, black-eye or can black beans rinsed well)
¼ cup olive oil
½ teaspoon minced garlic cloves
¼ cup red or white Spanish onion diced
½ cup diced red pepper
½ cup diced fresh tomato
2 each lemon and lime juiced
1 bunch cilantro
Kosher salt and fresh cracked pepper to taste
Mix all the ingredients well and cool for about 30 minutes and then stir and serve
****Any sprouts can be used for the Sunflower sprout, like broccoli sprouts or bean sprouts. Sprout kits are sold at our local farmer markets and really give you the ability to teach kids about growing food. Alfalfa sprouts are not my favorite for this as they are sometimes too hard to keep separated
Pumpkin and Chipotle Stew
1 cup diced Spanish onion
½ cup celery
½ cup diced carrots
2 tablespoons olive oil
1 chipotle pepper (optional)
1 leaf sage fresh
1 sprig rosemary
1 clove garlic minced
1 tablespoon minced turmeric at the market year round
1 teaspoon ginger
4 cups fresh diced pumpkin
4 cups chicken stock
1 cup diced roasted chicken
In a soup pot sauté the onion, celery ,carrots in olive oil for about a minute, then add the
chipotle pepper, sage, rosemary, garlic, turmeric and ginger to release the aromatics for about another minute. Then add the pumpkin and chicken stock and bring to a simmer and cook for about 4 to 5 minutes and add the diced chicken and cook for about another 10 minutes or until the pumpkin is tender. Season with salt and pepper and serve. This is a gluten free stew that is packed with flavor with a great broth.
****A great substitution for the pumpkin is butternut or acorn squash, potato or my favorite– green papaya. They grow in many yards here in north Florida and sometimes never seem to get ripe but this is a great way to use them when you are tired of waiting for them to ripen or they fall off before they do!
