Grape Salad
8 oz pack of cream cheese, softened
3 tablespoons sour cream
2 tablespoons brown sugar
½ cup walnuts toasted
3 cups seedless grapes (red, green & purple)
In a mixing bowl, add cream cheese and mix until softened, then add sour cream, brown sugar and walnuts. Mix well. Cut washed grapes in half and fold into mixture. Mix well. Place on serving plate and sprinkle brown sugar and walnuts on top as garnish.
Seared Tenderloin with Duxelles
Duxelles
¼ cup onion, diced fine
½ teaspoon garlic, chopped
1 tablespoon butter
2 cups chopped mushrooms, Crimini & button
1 cup white wine
¼ cup heavy cream
Fresh cracked pepper
Juice of 2 lemons
Quick sauté the onion and garlic in the butter then add the mushrooms cook for about a minute and add everything else and cook until it becomes thick like a paste.
Crostini
1 French baguette cut into ½ inch slices
Olive oil as needed
Parmesan cheese, fresh grated
Place crostini on cookie sheet drizzle on olive oil, dust with Parmesan and cook in oven until crisp.
Tenderloin medallions
Skinny end of tenderloin keeping it looking like a loin
Olive oil
Steak seasoning
Take cleaned tenderloin and drizzle with olive oil and season. Sear on grill until the temperature you like and sit off to side and let it rest for 2 to 3 minutes
Place toasted crostini on plate and top with cooked duxelles. Then slice tenderloin and place a piece on top of each crostini. I used a grilled pepper to garnish the top. Sprinkle fresh grated Parmesan cheese and serve.
Oreo & Banana Trifle with Yogurt
6 bananas
1 qt vanilla yogurt
¼ cup brown sugar
1 teaspoon cinnamon
About 35 or 40 Oreos
Peel and slice bananas into coin sized pieces. In a mixing bowl, add banana slices, yogurt, brown sugar and cinnamon and mix well. Break up Oreos and add to bowl and mix well.
In a serving dish or Mason jar, place a tablespoon of yogurt trifle mix and then add some Oreos cookies. Continue to alternate layers of trifle mix and cookies until you reach the top. Garnish top with broken Oreo cookies and refrigerate until ready to eat.
You can substitute vanilla ice cream for yogurt in this dish and freeze or just use fresh made pudding.
